Ingredients (serves 6)

  • 1/2 cup wheat germ
  • 2 cups oats
  • 2 ounces blueberries ; dried
  • 2 ounces cherries ; dried
  • 2 ounces apricots, dried
  • 1 cup almonds ; sliced
  • 1 ounce butter ; unsalted, plus extra for pan
  • 2 teaspoons vanilla extract
  • 1/2 cup honey
  • 1/4 cup brown sugar ; packed
  • 1/2 teaspoon kosher salt

  • Directions

    Preheat an oven to 350F (175C).

    Grease a 9x9 inch baking dish with butter and set aside.

    Evenly spread the oats, wheat germ and almonds on a baking sheet, and bake for about 15 minutes, stirring every 5 minutes or so.

    Meanwhile, combine honey, salt, brown sugar, vanilla and butter in a saucepan and cook over medium heat until the brown sugar is dissolved.

    Remove the oat mixture from the oven and reduce the oven heat to 300F (150C).

    Add the oat mixture to the sugar mixture and stir in the dried fruit.

    Transfer the mixture to the prepared baking dish and spread evenly and press down.

    Bake in the oven for 25 minutes.

    Remove the baking dish from the oven and cool completely before cutting into squares.

    Store the granola squares in an airtight plastic bag or container in the refrigerator for up to one week.
